Chili Dogs on Sweet Potato “Buns” with Roasted Peppers

We had our friends Vinny and Leslie over for dinner last night for this yummy recipe courtesty of I tweaked just a little. Sweet potatoes are a pretty starchy vegetable, so I don’t eat all the time, but it was a nice treat! This served 4 of us with a little bit of leftover chili. I got distracted and wasn’t that great about taking pics when putting together so sorry about that, but this was really easy and came out delicious!


2 long organic sweet potatoes (organic is important as you will eat the skins)

1 lb. organic grass fed beef

1 can organic fire roasted diced tomatoes with diced green chile (if you just have regular diced tomatoes you could add a small can of green chile)

1 cup chicken broth

6 assorted bell peppers

8 all natural hot dogs, preferably nitrate free

1 tsp crushed garlic

1 small to medium onion

1 Tbsp butter

Olive Oil

1 Tbsp Chili Powder

1/2 Tbsp Cumin

1 tsp Oregano

Sea salt and pepper

Seasoned salt (optional)

Shredded cheese (optional)


Heat oven to 400

Wash sweet potatoes and coat in a little olive oil then put on baking sheet and put in oven for about 30 minutes or until soft

Once those are in, put melt butter in a pot over medium high heat

Add onions and garlic and sautee until onions are soft. Add ground beef, along with a little salt and pepper, and sautee until browned

Add tomatoes, along with cumin, chili powder, oregano and chicken broth

Add salt and pepper to taste

Reduce heat and let simmer about a half hour, stirring every once in awhile

Add more chicken broth if too thick

Now get your bell peppers sliced up into large chunks, coat with some olive oil and spread on baking sheet, season with salt and pepper, or seasoned salt (my choice). Put into oven with sweet potatoes for about 10 minutes. Then take sweet potatoes out, turn on broil and stick pepper under broiler on high about 5 minutes or so to finish cooking and get a little char on them.

When there is about 10 minutes left for chili, while peppers are finishing cooking, use grill pan to heat up hot dogs.

While hot dogs are grilling, cut the sweet potatoes each in half then scoop out most of the inside of the sweet potato and save for snacks or sweet potato hash or something on the weekend. Make sure you leave the skin and some of the sweet potato inside though, you should end up with 4 sweet potato boats.

 Now pull out your peppers and you are ready to serve

Put sweet potato boat down on plate with 2 hot dogs inside

Top with chili and cheese (if desired)

Serve along with roasted peppers

So good, I think you will actually prefer the sweet potato “bun”!
