Hope everyone had a good weekend! This was Sunday night dinner for us that we enjoyed while watching a movie – Michael let me choose so we watched The Switch with Jennifer Aniston. We used to usually order in on Sundays, but I realized there was no reason for that, I can make something just as good and save us a few bucks too!
Ingredients:
1 medium spaghetti squash
Jar of organic marinara sauce (you will need about 14 ounces)
1 medium onion
1 Tbsp. crushed garlic
Olive Oil
Jar of roasted peppers
Sea Salt
Pepper
Oregano
Trader Joe’s 21 Seasoning Salute (or a seasoning mix you have on hand)
Organic Mozzerella cheese (optional)
Directions:
Preheat oven to 400 degrees
Poke holes using a knife all over spaghetti squash and put in microwave for 8-10 minutes depending on size. Do this before you start the steps below so it will have time to cool a little.
Put some olive oil in a skillet on medium high heat
Sautee onion and garlic together for a few minutes
Then remove casings from Italian sausage
Add Italian sausage to skillet and sautee until cooked through
Now take your spaghetti squash and slice in half, remove seeds
Using fork, scoop out the insides and add to pan
Now open your jar of roasted peppers and slice as many as you want up into skillet as well
Add a 14 ounce jar of marinara sauce to skillet, or about a cup
and a half if you have a big jar like I did. You will want to add your seasoning now
Just sprinkle salt, pepper, oregano, and 21 seasoning salute over the top and then mix
Now you will want to take the mixture and pour into a baking pan
Sprinkle your cheese across the top
Put in oven for about 10 minutes and it will come out looking like this!

I can’t believe they don’t have one there! I will try and remember to bring you some to Cali. It is great on just about everything, and makes a nice crust on fish too!

I have to agree with Kristin…every time I read your blog and see all your goods from TJ’s, it makes me sad. There’s one thing I miss about Cali. We don’t have one in Austin either! We do have Whole Foods though, which is great but much more expensive than Trader Joes! BOO!

I would suggest using Paleo Girl’s method. They can be hard to split without microwaving at all though, so you might want to put it in for at least a minute or 2 to soften up the shell and make that easier.
