Well it has been an interesting last few days here in Seattle. We had a big ice storm yesterday so I once again worked from home, sorry for my lack of posting. Today is supposed to be warmer and the streets were looking better so Michael dropped me off at work. I’m dying to put on a pair of high heels, but it looks like it will be boots, boots, and more boots for a little while, we have lots of rain in the forecast! Once again pulled out the faux fur vest today, and layered over a turtleneck for some extra warmth. Sorry, not very exciting. I did however pick up a fun hat on clearance at Macy’s so decided that if I ever needed a warm head today was the day. What do you think?

Tuesday night for dinner I made Easy Paleo Crock Pot Chicken Curry with Peppers and Cabbage, and it was soooo tasty and very easy. I just chopped the veggies and chicken the night before and then put it all together in the Crockpot in the morning. I added just a little sea salt and garlic powder, and because I didn’t have 2 cans of coconut milk, I instead used the 1 can I had plus 1 cup of chicken broth. Because of all the veggies, when you are stirring it, it will seem like maybe you don’t have enough liquid, but I promise it will all cook down. You can always add chicken broth at the end. I also ended up using 3 bell peppers – red, orange, and yellow and used red curry paste as she suggested. Might be interesting to try with green curry paste sometime as well. This makes me want to use cabbage in my Crockpot more often…
I whipped up an Avocado Cilantro Chicken Salad that I figured would be good to take along for lunches for a few days (before I knew I wasn’t going to be going anywhere). This was a good idea in theory, but this salad is really best made and eaten right away. I had to use dried cilantro as I didn’t have any fresh unfortunately, it would have been better with fresh, and if I make this again I will also add some crumbled bacon. This would be a great dish to take to a summer potluck or serve at a BBQ.
I also made a batch of these delicious chocolate chip cookies from The Primal Palate, but forgot to take a picture. If you are looking for an easy and tasty treat, give these a try! (sorry, I forgot to take a picture!)
